Now we would like to introduce you to our family recipe – white cold soup. It is a variation of traditional Lithuanian cold soup (Chłodnik) – you can check our recipe for this soup here. It is even faster and easier to do and it is a delightful treat on a hot summer/spring afternoon.
The creamy taste combined with the freshness of cucumber, radishes and chive is pure perfection for me. I will be honest to you as a kid I didn’t eat it as I was a fussy eater. Now I know how much I missed out and I love to make this white cold soup as a refresher on those hot summer afternoons.
So make haste and start preparing this delicacy!

Ingredients for white cold soup
- 2 Chives bunches
- A bunch of radishes
- 2 Dill bunches (or one large)
- 2 cucumbers
- 4 hard-boiled eggs
- 300ml sweet (liquid) cream
- Juice from 1 lemon
- Salt/pepper to taste
- 1l boiled cooled water
Method:
- Cut the chives and season with a bit of salt and squeeze to let go of the juice. We add thickly cut radishes and cucumbers. Then add cut dill.
- Pour water and sweet cream and add diced eggs. Season with salt/pepper/lemon juice.

And it’s ready!
Traditionally, as every cold soup, we serve it with boiled young potatoes. The recommendation stands to this variation as well. My family like to sprinkle some fried onion and bacon on top of them or just some freshly chopped dill.
