Tapenade is an olive paste that comes from French Provence. In southern France, where it comes from, tapenade is always served as an aperitif. The main ingredients of tapenade are olives, green or black, capers, anchovies and olive oil.

The first mention of tapenade dates back to 1899. It appears in “The Cuisinière Provençale” book, written by Jean-Baptiste Reboul, who was a chef of “La Maison Doree” restaurant in Marseille. Nevertheless, there are facts telling that tapenade was invented many years ago.

Although traditionally tapenade is usually made from black olives, you can also use green olives to prepare this paste. Today we will share our own recipe with you. So, let’s start.

  • 1 glass of black olives, without seeds
  • 2 teaspoons of capers
  • 2 anchovy fillets (skip in veggie version)
  • clove of garlic
  • 1/2 teaspoon of balsamic vinegar
  • 4-5 tablespoons of olive oil
  • freshly ground pepper
  • 2 tablespoons of chopped parsley
  • multigrain rye bread
  • eggs
  • for decoration: parsley or chives, green olives.

Method – tapenade:

  1. In the case of using anchovies (not to make tapenade too salty) rains the filets and steep for 30 minutes in milk. If not – skip this stage.
  2. Add olives, capers, anchovies, garlic, pepper and parsley to the blender. Add balsamic vinegar and olive oil.
  3. Mix all ingredients in a blender, up to a homogeneous mass.
  4. Try tapenade up, if it is not too salty, add salt and pepper.
  5. Leave ready-made tapenade in the refrigerator for at least 30 minutes, so that all the flavours are merged.

Method – soft boiled eggs:

  1. How to cook the perfect soft-boiled egg with liquid yolk? Remove eggs from the fridge for a few minutes before cooking. They should be at room temperature before cooking.
  2. Pour water into a pot and boil it.
  3. Put the egg on a spoon into the water. Cook it for 3.5 minutes (small egg), 4 minutes (medium egg), 5 minutes (large egg).
  4. Remove with a spoon and gently cool to stop the cooking process. Perfectly made soft boiled egg is ready!

Method – tapas:

  1. Cut the bread.
  2. Put tapenade on the bread.
  3. Cut the egg into 3 parts, put on a sandwich.
  4. Decorate with parsley or chives and sliced green olives.
  5. Sandwich with tapenade and egg is ready. Enjoy!
