So we start this journey through Lithuanian cuisine with a classic – Lithuanian cold soup! This soup is simply divine especially on those hot summer afternoons (or spring: P). We will be honest with you… we ate this amazing dish from the first day of our trip to Lithuania and fall in love with this soup more and more with every single spoon…
That’s why we had to give you this recipe so that you could join us! Follow these simple steps and you will be with us soon!
Ingredients for Lithuanian cold soup:
- 2 bunches of young beetroot
- 2 fresh cucumbers
- A handful of dill
- 2 Hard-boiled eggs
- 1l sour cream / yogurt / buttermilk
Salt/pepper to taste- 1 tbs of sugar
- 2 cloves of garlic
- juice from 1 lemon
- Boiled beetroot (optional)
- Chives (optional)
- Radishes (optional)
Method:
- Wash the young beetroot, spit the root part on the grater, cut the stalk (without green leaves) and pour boiling water over till covered and cook for about 5 minutes covered. Cool. To make the soup
redder , you can add grated beetroot. - Grate the peeled (large mesh) peeled cucumbers. Add to beetroot pulp with finely chopped dill. Here you can also add chopped chives and radishes (optional). Season with salt, pepper, sugar, garlic and lemon juice to taste.
- Pour the sour cream/ yogurt/buttermilk and set aside in the fridge for about an hour.
- Before serving, decorate the soup with half the egg and it’s ready!
Traditionally, as every cold soup, we serve it with boiled young potatoes.
