Well. In that case our recipe for a green spinach cake, also known as “forest cake” or “green moss cake” will work perfectly. A delicious, unusual cake with a mysterious ingredient. Intrigued? It’s get to job.

Green spinach cake “forest” or “forest moss”

Ingredients for green spinach cake:

Cake:

  • frozen or fresh spinach pack, 450 g
  • 3 eggs
  • 2/3 glass of oil
  • 1 glass of sugar
  • 2 glasses of wheat flour
  • 2 spoons of baking powder

Cream:

  • 250 g mascarpone cheese
  • 200 ml of cream 36% or 30%
  • 4 tablespoons of powdered sugar
  • vanilla sugar or 1 teaspoon of vanilla extract
  • 1 pack of cream-fix, it will be useful for stiffening the cream

Decoration:

  • pomegranate, blueberries and mint for decoration

Method:

  1. Defrost the spinach, squeeze the juice, but not the whole. Blend it up.
  2. If you use fresh spinach, wash it, put in a pot and heat for 2 minutes, stirring. The spinach must wither. Put spinach into a bowl, squeeze it a bit, but not too much, and mix it into a homogeneous mass.
  3. Warm the eggs up by putting them in warm water, just tap water. Leave eggs for 15 minutes.
  4. Pour the eggs into the bowl, add the sugar. Beat the fluffy foam.
  5. Add oil still mixing at low speed. Add the spinach mass and mix.
  6. Pour the previously sifted flour into mass and add the baking powder. Mix briefly at low speed, only to combine the ingredients.
  7. Grease the baking mold with butter and put baking paper in. Pour the mass into the mold.
  8. Put it in a preheated 180 degrees oven and bake for about 40 – 45 minutes.
  9. Take out the cake and cool it down.
  10. In the meantime make a cream. Put mascarpone cheese and cream into bowl, add powdered sugar and vanilla.
  11. Mix it for a few minutes. The mass must increase in volume and became fluffy. Add cream-fix to maintain volume and mass density.
  12. Cut cake into 2 parts. Put the lower one on the plate. Use the blender to smash the upper part of cake (small pieces sand like).
  13. Put mascarpone cream on the cake. Sprinkle the cream with previously prepared “sand”.
  14. Decorate the cake with pomegranate, blueberries and mint leaves.
  15. Green spinach cake / “Forest cake” / “Forest Moss cake” is ready. Enjoy!
