I don’t know if we mentioned that but we love broad bean during the spring and summer times. It is full of vitamins and is a perfect snack. You can read more about broad been and how to prepare it in our previous post here. Today, we want to present you a different way of eating this nutritious veggie – broad bean salad with blue cheese and walnut.
This salad is beautifully green and healthy. However, the blue cheese and walnuts give it the extra kick of saltiness, softness and crunch. Which makes this salad perfect on each and every level.
So how you make this tasty salad with blue cheese and walnut you may ask. Read on and you will find out!
Ingredients for broad bean salad with blue cheese and walnut:
- 250g of blue cheese (we used Roquefort but danish blue or even camembert will work)
- 100g of cooked broad bean
- 100g of corn salad (you can use any other type of salad for this recipe it will work great)
- a handful of walnuts (again you can use other nuts but for us, the walnuts make the recipe great)
- 2-3 tbsp of balsamic vinegar
Method:
- Cook broad bean as per instructions in our post.
- Then give it a cold bath (wash it in cold water to cool it down faster or put it in a ball of ice and cold water) so you would be able to peel back the skin.
- One by one peel back the skin of each broad bean and set it aside.
- Now cut the blue cheese into bite-size cubes and set it aside.
- If you are using walnuts or any other nuts that are of a bigger size we recommend to chop it into smaller pieces (that step is optional)
- Now all the prep work is done let us start to assemble the salad.
- In a bowl or a plate put the salad of your choice.
- Then put the cheese, broad bean and nuts on top of the salad.
- As the last step sprinkle the salad, with some balsamic vinegar and the salad is ready to be served.
