Holidays are right here! That’s why we have for you another recipe, which will like a magic wand allow you to bake a wonderful cake without any effort and in less time than it would take you going to the nearest bakery. And this time it’s the recipe for the most festive cake in Poland. Can there be a Christmas without the poppy seed cake? We don’t think so 🙂

An additional advantage of our poppy seed cake is that there is no flour or sugar in it. The main sweetener of this poppy seed cake are dried fruits and thanks to them you can make this cake in a different way every time. For example, once we took as a base for our poppy seed cake mainly dried apricots and walnuts with a small addition of other dried fruits, another times there was mainly coconut flakes, recently there was a lot of peanuts and dates. Mixing and changing type of dried fruits and nuts in this recipe, each time you can have a bit different cake – with a hint of apricot or with a hint of coconut … We encourage you to experiment in the kitchen!

So let’s start our work, because Christmas is coming!

Ingredients for swift poppy seed cake:

  • can of poppy seed mass (about 850 g)
  • about 50-100 g of each of various dried fruits, you can choose whatever you like: almond flakes or ground almonds, walnuts, hazelnuts, peanuts, coconut flakes, raisins, dates, dried apricots, dried pineapple, fruitcake mix, candied orange peel or other dried fruits that you like the most. If you decide to use only 3-4 types of dried fruits, then you should take 150 g each, or you can take even more dried fruits that you want to be the basis taste of your cake
  • 200 g of single cream (recommend 30% fat)
  • 100 g of dark chocolate
  • 5 eggs (at room temperature)
  • for decoration: powdered sugar and optionally candied cherries or dried colored fruits: pineapple, papaya or other

Method:

  1. Turn on the oven at 175 degrees C to warm it up
  2. Take the poppy seed mass out of the can into a large bowl and mix, adding gradually all the dried fruits, which you decide to use. Larger dried fruits should be cut into small pieces and we recommend to chop the nuts.
  3. Then add eggs – add them one by one, mix for a half of minute after adding every single egg.
  4. At the end, add cream and chopped into small pieces bar of chocolate. Mix all together thoroughly.
  5. Take a round backing tin, put baking paper on the bottom. Spread the tin sides with butter and sprinkle lightly with flour.
  6. Pour the poppy seed batter into the backing tin, level it and put in the preheated oven. Bake for 50 minutes. It’s best to leave the poppy seed cake to cool completely overnight at room temperature.
  7. Before serving, sprinkle poppy seed cake with powdered sugar and put the candied fruit. If you want to use dried fruit for decoration (eg a colorful pineapple cube, which also looks nice), you can put the dried fruit on the cake before putting it in the oven. That way they will be kept in place. Hazelnuts are also good for decorating a cake before putting it in the oven.
