Golden syrup is our “secret” ingredient that we often use in our sweet recipes. It can easily substitute for corn syrup (or any syrup in fact) and even honey. It is easy but it can get tricky. Enjoy!

Ingredients for golden syrup:

  • 200 g sugar
  • 50 g of water
  • 1 kg of sugar
  • 600 g of boiling water
  • 2 tablespoons of lemon juice (or more)

Method:

    1. In a larger pot put sugar with water, mix. Boil (from this moment don’t stir!) on medium setting.
    2. Cook until the sugar is caramelized and the mixture will be liquidy and will have a beautiful dark golden colour (do not burn – it will add a bitter aftertaste). Remove from the burner.
    3. Carefully add boiling water to the hot mixture (the reaction will be almost explosive – be very careful!). Pour sugar and lemon juice.
    4. Mix, boil and cook on minimal heat for 45 minutes (without stirring at all during cooking!), Until the syrup thickens a little (hot syrup will have a not too thick consistency, but when cooled it thickens).
    5. If, after all, it is not thick enough after cooling, just pour it into a pot again and cook it. If it is too thick, just add a little hot water and mix.
    6. Cool, pour into jars. Store in a cabinet at room temperature. The recipe will give you about 1 litre of golden syrup.
