So the barbecue season is officially on. We have opened it last weekend and make several of our favourite barbecue dishes. And we will present them to you in the next few weeks. We will start this series with grilled aubergine and courgette.

Aubergine and courgette are one of my favourite veggies. You may already know that by the number of recipes we have o this blog that contains those two delicacies.

Grilled aubergine and courgette with mozzarella cheese has been present on my barbecue for years now. So much so that my friends and family don’t consider it a full barbecue if this combination is not on the menu.

It is easy and it is a great way to sneak in those veggies during barbecue dinners. So here it is, the recipe for grilled aubergine and courgette with mozzarella cheese.

  • 2 aubergines Small
  • 2 courgette medium size
  • 200 g mozzarella cheese


  • 100 ml olive oil
  • 1 tsp salt and some to sprinkle the veggies
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp powdered garlic
  • 1 tsp thyme
  • 1 tsp rosemary


  • Slice both aubergine and courgette and sprinkle some salt so they will not soak up as much of the olive oil.
  • Mix in all the spices and olive oil. And in a large bowl putt all the sliced vegetables and pour all the marinade on to the vegetables. Toss them around in the bowl – I tend to do this with my hands rather than a spoon so I have more control over the spread of the marinade. Set aside for about 20 minutes.
  • In the meantime cut mozzarella cheese into cubes of about 1 cm.
  • After the 20 minutes passes the veggies can go on the barbecue. Grill them until they are nice and grilled and flip them over. Then on the middle of the slice put the mozzarella cube (if the slice is larger you can put more than one just be mindful that the cheese will melt from the heat and will spread out. If you are using an electric grill that can grill from top and bottom be mindful of the cheese and do not let it touch the grilling surface.
  • After the cheese is nice and melted they are ready to e served. They taste best fresh and hot on a piece of bread that you can grill beside the veggies.
