The magic is here. This week we start with something sweet and healthy. That is why we have prepared for you a sweet treat in the form of a beetroot brownie. Get to work and don’t forget to post the picture here – so we can admire the masterpiece.
Ingredients for beetroot brownie
- 250 g butter (you can use clarified butter)
- 250 g dark chocolate (70%), chopped
- 200 g powdered sugar or any equivalent
- 3 eggs
- 150 g flour
- 1 teaspoon of baking powder
- 250 g cooked or baked beetroot (unsalted), peeled and finely grated
- 100 g chopped nuts (optional)
All ingredients should be at room temperature.

Method:
- Mix the flour and baking powder together and put aside.
- In a pot melt the butter (on low heat/flame). Then add the chocolate and stir from time to time until it is almost melted together put it aside and mix it to form a smooth chocolate sauce. Lightly cool.
- In a separate bowl mix eggs and sugar with a whisk. Then add the chocolate sauce (it might be warm) and mix until it’s smooth.
- Add the dry mix (flour+baking powder) to the chocolate sauce and stir it until smooth.
- At the end add beetroot and vanilla extract and mix until it is all incorporated together.
- You can also add nuts to give the brownie the extra texture (we used walnut but any other nuts will be great as well).
- Bake it in a form 18 x 28 cm layered with baking paper in temperature of 170ºC for about 20-25 min (the smaller the form the longer you should bake it for). Just to be on the safe side use a wooden stick to check if the cake is ready – the stick can be moist but the batter should not stick to it.
- Take out, cool down, cut and voilà!
In order to make it gluten-free (yes we did that option as well) just switch the flour and baking powder for the gluten-free option and it will be as amazing!
