Pumpkin is a great vegetable, which you can use practically in every type of dish. This time we have an idea for pumpkin cheesecake with orange peel topped with white yoghurt-chocolate icing.
Sounds interesting? Let’s do it, as it’s quick and easy.
Ingredients for pumpkin cheesecake with a hint of orange:
- 1kg of dry cottage cheese
- 450 g of pumpkin puree
- 150 g of sugar
- 3 tbs of potato starch
- 3 eggs
- 1 package of creamy pudding
- 1 package of vanilla sugar
- orange peel (from 1 orange)
- 1/4 tsp of vanilla extract
- white yogurt-chocolate icing
Method:
- Make pumpkin puree.
- Mix the pumpkin puree with dry cottage cheese.
- Keep mixing it while adding one by one all the ingredients: orange peel, vanilla sugar, vanilla extract, potato starch, creamy pudding powder and sugar.
- At the end add eggs and mix for another 5 minutes.
- Pour the mixture into baking form(we suggest round shape) which is lined with baking paper and bake for 60minutes at 180°C.
- Remove from the oven and cool at room temperature.
- Decorate it with white yoghurt-chocolate icing.
How would you decorate your cheesecake? You can pour it all over the cake or make a pattern, e.g. a flower, checkered or cobweb.
