This is our favourite way to cook potatoes for breakfast, and our friends laughed at us when they asked us what we were making, and we answered “Breakfast potatoes!” They thought it was a joke because it was not a real recipe. So now, after it’s published, we think they are!

There is nothing too special to this recipe we will admit, but it is technically our first self-acclaimed recipe and comforting, especially if you’ve had a heavy night drinking, or you need something to settle your stomach.

It does contain a lot of oil and a simple trick to make this even tastier is to cook this in the same pan as you did with your sausages or bacon (with all the fat left in there) for extra flavour.

30 minutes including prep

Ingredients for breakfast potatoes:

  • 1 potato per person (up to 4 will fit in a big pan) roughly peeled and cubed to 1 cm
  • 1 whole garlic
  • 3 sprigs of fresh rosemary or thyme
  • Sea salt to taste
  • 4 tbsp of vegetable oil or olive oil if you’re feeling fancy (animal fats work well for this too).
  • 1 tbsp butter (optional)

  1. Add your oil to a pan and heat over medium-high heat, then add the potatoes. Turn regularly for 5 – 10 minutes until they start turning golden.
  2. Once they have some colour then add the garlic sliced through the middle so it’s in 2 pieces, rosemary or thyme sprigs, and a tbsp of butter (optional).
  3. Sprinkle with a little sea salt and stir for another 10 minutes until they are golden on each side.
  4. Remove them from the oil with a slotted spoon and serve. We save the garlic for other recipes too.

Serve immediately and season a little extra to taste. It is best to do this when they are still hot, as this makes the potatoes extra crunchy!
