Ahhh… homemade mayonnaise. Fresh. Inexpensive. Quick. Delicious. Not to mention additive free.

Mayonnaise takes less than 10 minutes to make at home, and it tastes SO much better than most of the brands at the store. Fresh is definitely better when it comes to mayo, and you only need 5 ingredients!

Mayo is incredibly easy to make, so it’s one of those things where if you care enough about the flavour and health factor, making it yourself becomes worthwhile.

Use a “neutral oil,” I mean one that is neutral in flavour. We recommend sunflower oil.

Anyhow, mayonnaise is simply an emulsion of oil and egg yolks, with a little acidity and salt added to brighten the flavours. So here’s the basic recipe:

Ingredients for mayonnaise:

  • 400 ml of oil
  • 1 egg yolk
  • 3 tbsp of wine vinegar or lemon juice
  • 1 tbsp of mustard
  • 1 tbsp of agave syrup (optional)
  • 2 tsp of salt

Tip: Use a mixer (food processor or a blender) for this recipe.

Method:

  1. Mix the egg yolk with mustard.
  2. Then while the mixer is on start slowly adding the oil. Do it in a steady and constant flow.
  3. When all is nice and smooth add the rest of the ingredients (vinegar/lemon juice, syrup [optional] and salt)

And you’re done! It is so easy and delicious. We bet that from now on you will make this recipe constantly.

On the side note. As this mayonnaise doesn’t have any preservatives you should use it up within a week. Also, remember to keep it in the fridge.
