My love for asparagus is eternal and only grows with time. This time I made a very simple and quick dish, but it turned out to be fantastic. As it is always with asparagus dishes. This vegetable just can’t go wrong and always tastes great!
Today I will show you, how to prepare really fast pan-fried asparagus. You will also see in this recipe, that asparagus goes great with the sun-dried tomatoes. This is one of my favourite food combinations. Although it is a vegetarian dish, it tastes so delicious, that even a meat-lover would lose his head over heels for the asparagus. If you like, you can also add a steak to this vege dish.
So let’s start cooking! It will take us only 10 minutes. 🙂
Ingredients for pan-fried asparagus with toast:
- a bunch of green asparagus
- 2-3 pieces of bread
- a few thin mozzarella pieces
- 3-4 sun-dried tomatoes (you can make them on your own with our recipe)
- 2 tbsp of oil from sun-dried tomatoes (or other)
- a pinch of salt (sea salt would be the best)
Method for pan-fried asparagus with toast:
- First of all, we wash and prepare asparagus. You can wind out, how to do it from our article here.
- Now we preheat the frying pan on high flame. We pour the oil from sun-dried tomatoes and spread the asparagus on the pan. Now add a pinch of salt, sea salt is the best for this. Remember, that is is important to dry the asparagus before putting them on the frying pan, so that there is no water left on them after washing.
- The first 5 minutes we fry the asparagus on high-temperature mixing them all the time. It is best to roll the asparagus by moving the closed pan without opening it.
- Next, we lower the heat and simmer the asparagus on medium heat for another 5 minutes. Now we take the asparagus out of the pan and put it on the plate.
- Now we use this same pan with oil left on it to fry the bread. You can even use stale bread, just add a few drops of water on it before frying.
- Fry the bread for 2 minutes on one side.
- Next, turn the bread pieces on the other side and put mozzarella slices and sliced sun-dried tomatoes (the homemade ones taste the best). Fry for another 2 minutes.
- Ready! Put the mozzarella toast on the pan-fried asparagus.
- Enjoy!
