This cheesy cheddar cauliflower side dish is a Sunday favourite. It will usually accompany Sunday roast dinners and is hugely traditional in the UK. Yes, that’s right, it’s not just fish and chips for the Brits.

This can also be adapted depending on what cheese you have to hand but we went with traditional, mature English Cheddar cheese.

So let’s just make some and enjoy it as much as we can (and not only on Sundays)!

Ingredients for cheesy cheddar cauliflower

  • 1 cauliflower head (we used romanesco)
  • 350 g cheese grated (you can add more if you want a richer flavour)
  • 750 ml bechamel sauce (see our recipe)
  • 6 slices of smoked cheese or 200 grams of smoked cheese grated
  • 2 tsp wholegrain or dijon mustard
  • 1 tsp salt
  • pepper to taste
  • 1 tsp olive oil

Method

  1. Warm your bechamel gently over a low heat and slowly stir in the grated cheese, mustard, salt and pepper until you have a consistent sauce.
  2. Using a small knife, separate all the florets of cauliflower from the stalk and put in a large glass baking tray that has been wiped with olive oil to stop anything from sticking.
  3. Pour the sauce over the cauliflower until the cauliflower is just covered, and cover the top of the cauliflower with the smoked cheese.
  4. Place in the oven for 30 minutes at 180 degrees, until the cheese goes golden and it will be ready to go.

This will be a great side dish to your main meal and is a real guilty pleasure. We will not count the calories in this for sure!
