Using our red sauce and bechamel sauce recipes and a few veggies, you can combine these to make this delicious veggie lasagne. To be honest this is our favourite lasagna because the sauce is usually the best bit and with this recipe, you will have a rich tomato, courgette lasagne, which will impress your friends.

 

Serves 6 – 8  Takes 2 hours including making the red sauce from scratch from our Easy Italian Red sauce recipe.

 

INGREDIENTS

750 ml Italian red sauce

500 ml Bechamel sauce

1 large courgette (300 g to 400 g)

300 g grated cheese or mozzarella

6 cherry tomatoes to garnish

Handful of fresh basil

1 tbsp olive oil

1 box of lasagna sheets (you will have leftovers)

 

METHOD

 

  1. Grease your lasagne dish with olive oil, we used a disposable dish ourselves but pyrex works too. Add one layer of dry lasagne sheets to cover the bottom of the dish. It doesn’t matter if there are some gaps, which is better than overlapping the sheets.
  2. Grate your fresh courgette into the red sauce and warm through until the access water has evaporated.
  3. Add one large spoon of sauce to the lasagne sheets and spread evenly until the base is covered with a small layer of sauce, about 1 cm thick.
  4. Add some grated cheese or a couple of thin slices of mozzarella, and a large spoon of bechamel, and cover with another layer of lasagne sheets
  5. Repeat the process until you have finished the red sauce. The more layers of pasta you add, the easier it will be to serve when cooked.
  6. On the last layer of red sauce, bechamel, cover with lasagne sheets and then pour over the remaining bechamel until the lasagne sheets are covered with sauce. Top it all off with the last or your cheese and cherry tomatoes.
  7. Cover the lasagna with tin foil and place in the oven at 170 degrees for 30 minutes. Remove after 30 minutes and take off the tin foil and place back in the oven for another 20 minutes, or until the cheese turns golden. To check that the lasagna is cooked through, just poke a knife through the middle of the lasagne checking that it is soft all the way through to the base. If not cook for an additional 10 minutes until cooked through.
  8. Garnish with fresh basil, cut and serve!
