The sauerkraut is associated with autumn and for us, it is such a perfect autumn comfort food. We know that comfort food is probably more associated with ice cream, chocolate or other sweets (and we definitely do not claim that it is not for us). But when suddenly these cool autumn days and evenings come, we feel eager for these warm or sour flavours.

There are many dishes of this type in Polish cuisine and we want to present you a classic which will be perfect as a full dish or just as a side dish. So we invite you to try this sauerkraut with bacon and be prepared to be blown away!

Ingredients for sauerkraut with bacon:


  • 1-2 onions
  • 1-2 tbs of flour
  • about 100ml of water


  • 0,5kg Sauerkraut
  • 100g smoked bacon
  • 2 bay leaves
  • 2-3 allspice
  • salt (to taste)
  • sugar (to taste)
  • hot water

  1. In a pot place the sauerkraut and fill in with water till the sauerkraut is fully covered. 
  2. Add allspice and bay leaf (as well as salt and sugar if it ts necessary) and cook until it is soft (about 45 min), If necessary add some boiling water. 
  3. In the meantime cut bacon in small squares and fry them (usually you don’t need any oil as the bacon will let some). When it is ready to add it to the sauerkraut.
  4. In the same pan as the bacon fry the onion (firstly, of course, you need to cut the onion as finely as you can).
  5. Then ass 1-2tbs of flour and mix, then add water so it is a consistency of very thick paste.
  6. Add it to the sauerkraut and mix well.
  7. Cook it for a minute or two and voila. It is ready!

As a side note, this dish is best on the second day when all the flavours will come out. However, we know it is hard to resist so don’t blame yourself when it dissipates before than. Just remember next time to make a bigger portion 😉
