Our recipe for orange, white wine, and shrimp tagliatelle is a simple shrimp pasta made to look fancy as it’s a special day for some of us, and for the rest, it is just an easy and massively tasty and fresh meal! Based on the French Beurre Blanc sauce, with a fresh orange twist to it to freshen it up and most importantly, add that X-factor to it.

Serves 2 – 3 (the extra is in case you’re still hungry)
INGREDIENTS FOR ORANGE, WHITE WINE AND SHRIMP TAGLIATELLE:
- 200 grams of shrimp/prawns shelled
- 200 grams of tagliatelle pasta if you have spaghetti is fine
- 1 orange squeezed
- 200 grams of butter
- 2 cloves of garlic crushed
- 1 white onion finely diced
- 100ml white wine
- A handful of parsley
- 1 tsp salt and more to season at the end
- A pinch of black pepper
METHOD:
- Heat a frying pan or a wok with a spoon or 15 grams of butter to a medium-hot pan and throw in the prawns/shrimps and garlic and fry for 5 minutes. For larger prawns cook for an additional minute.
- Remove them from the pan and set them aside for a minute.
- In the meantime, add your pasta to a pot of boiling water with a spoon of olive oil and salt. Cook for 12-15 minutes depending on what is said in the packet. Then drain once cooked and drizzle with a little more olive oil.
- Add the onions to the frying pan with the white wine and ¾ of the orange juice and reduce for roughly 10 minutes until nearly all the liquid is gone.
- Once the liquid is almost gone (only a spoonful left in the pan) add the butter in 20 – 30 gram pieces, and heat very gently ensuring that the butter is melting but still cold enough to touch without burning at all times, and add the butter gradually for 10 minutes until you are left with a milky liquid.
- Add the prawns, pasta and fresh parsley to the sauce and stir until all is heated through to the middle (2 minutes) and medium heat.
- Serve immediately and season additionally if needed.
This will not last too long as it is sure to be a pleaser for you at least. If you don’t have shrimp, you can substitute with another white meat like chicken diced into small pieces. Alternatively, for vegetarians, you can use some courgette instead of meat and you will preserve that great flavour from the orange and white wine.
