Happy Pancake Day 2018!!!

Easy pancakes, and not too messy to make! Easy let us make some fluffy American Pancakes. You can mix everything in a plastic sports shaker like we did to minimize the mess, if not, just a regular mixing bowl will be fine. And use the same pan you used to melt the butter to cook the pancakes in too. We all hate dishes, so I recommend this highly.

For the kids, or the inner child. We have some mess saving tips too to make this as easy as possible on the kitchen sink. You can customise this recipe for fluffy American Pancakes with many toppings, so don’t limit yourself. Just use your imagination!

Ingredients for fluffy American Pancakes:

  • 150g plain flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon powdered sugar
  • 225ml milk
  • 1 egg
  • 25 grams of butter, melted
  • butter or oil for frying

Method:

  1. Melt the butter in a small saucepan or the same frying pan you will be using later, and add all the wet ingredients to the shaker first, and the butter last and shake immediately.
  2. Mix all the dry ingredients in a separate bowl and then add this to the wet mixture in the shaker and shake well until there are no lumps.
  3. Heat up a non-stick frying pan over a medium heat, use the same one you used to melt the butter to start with and wipe off any excess oil or butter with a piece of paper towel.
  4. Pour in, or spoon in a couple of spoons of the mixture until you get the size you want, and cook until you see the whole top of the pancakes is covered in little bubbles (about 2 minutes), then flip them and cook for another couple of minutes. Repeat this process until you have no mixture left.
  5. Serve immediately!

All done! We also put in a handful of blueberries into the pancake batter to make blueberry pancakes. If it is out of season you can always use frozen berries too. Also good with a spoon of jam (you can try our own homemade recipe for choco-plum jam), or a knob of melted butter. Essentially, everyone at the table can add whatever they like to make it there own.
