Fluffy blueberry pancakes are a perfect option for a weekend breakfast. You can enjoy these pancakes now in the summer (with fresh blueberries) or in winter (using frozen ones). The secret to making them fluffy – the beaten egg whites. They add extra air and lightness, so they turn out fluffy every time.

Ingredients for fluffy blueberry pancakes:
- 2 egg whites
- 2 egg yolks
- 200g of flour
- 2 teaspoons of baking powder
- vanilla sugar (1 packet)
- pinch of salt
- 250ml of milk
- 50g of melted butter
- blueberries
Method:
- In a metal bowl, beat egg whites until stiff; set aside (tip: if you add a bit of salt they will beat faster; tip 2: the egg whites should be at room temperature).
- In a separate bowl, sift together flour, baking powder, sugar, and salt.
- Beat egg yolks in a separate mixing bowl then add milk and melted butter.
- Stir egg mixture into dry ingredients. Mix until batter is smooth and stir in blueberries. Fold in gently the beaten egg whites.
- Cook the pancakes on a hot greased griddle or a pan on one side until the edge looks dry and bubbly and the bottom is browned.
- Flip the pancake and cook the other side until nicely browned. Enjoy!
You can serve these fluffy blueberry pancakes with maple syrup (or any syrup you have) or whipped cream or any other way you prefer they will be delicious just the same!
