Our first recipe from our tomato season is the fresh tomato soup. It is easy and flavourful and for us, it’s the essence of the summer. It reminds us of our childhood and those years of fun and innocence. So hop on this amazing ride down the memory lane.

Get a glass (or bottle) of wine and let’s get cracking. By the way, we do suggest to make a BIG portion of the fresh tomato soup as it will disappear in a matter of minutes and it won’t be the fault of dwarfs, house-elves or mice (as we tend to put the blame on when somethings go missing).

Ingredients for Fresh tomato soup:

  • 1kg of tomato (we suggest to use plum or raspberry tomatoes)
  • 0,5l of broth (of your choice)
  • few bay leaves
  • few allspices
  • 1 tbs of sugar
  • salt/pepper to taste
  • single cream (optional)
  • rice/noodles/rice flakes (optional)

Method:

  1. Wash and cut the tomatoes in medium size pieces (it is not necessary to cut them evenly as they will be blended later on)
  2. Put them in a heavy-bottom pot (do this so the tomatoes won’t be stuck or burn as we don’t use any oil or water to boil them as they will let the juices) and cook them till they are more of a paste consistency
  3. Then blend or sieve the cooked tomatoes.
  4. In another pot heat up the broth with bay leaves and allspices. Add the tomato sauce and add the sugar. You should also add salt and pepper to taste
  5. Now there are a few routes you can go.
    • Firstly you can just eat it plain (when you use a vegetable broth that way the soup is vegan) or with cream.
    • Another choice you have is what you want to use “inside” e.g. rice, noodles or even rice flakes. All those choices are more than great so it is up to you what you will go for (we used rice flakes if you do the same add them straight away to the soup and cook for few minutes)
  6. When you made your mind up we can only say “Bon Appetit!
