Croquettes are very healthy, cause based on millet, which is gluten-free and easily digestible. Millet is a great alternative to potatoes, pasta or rice and is easy to prepare.
Croquettes tastes great, no wonder we like it so much! The outside gets crispy and the inside stays soft. We are just in love with them, so yummy!
We have made this recipe with spinach, garlic and cheese, but feel free to experiment. This recipe is also a great way of using leftover cooked millet.
So let’s get ready for cooking.
Ingredients for millet croquettes stuffed with spinach and cheese:
- about 2/3 cup of millet
- 100 g. spinach
- 100 g. of grated yellow cheese (we used Gouda)
- 1 egg
- salt
- pepper
- lemon pepper
- 1 garlic clove
- garlic pepper (optional)
- olive oil for frying
- breadcrumbs and egg for crumbs
Method:
- Rinse the millet several times with warm water before cooking.
- Put in a pot and add about 1.5 glasses of water. Remember, there should be twice as much water as there is millet.
- Cook it until the millet absorbs all the liquid. After cooling, add further ingredients: an egg, grated cheese, rinsed and chopped spinach, grated garlic clove. Add salt, black and lemon pepper according to taste.
- Mix it up.
- Form square-shaped chops – croquettes.
- Coat the croquette in egg and breadcrumbs.
- Fry them until golden.
