Semolina with fruit is one of my childhood dishes. When I and my siblings spent our holidays with my grandfather, it was one of those dishes prepared by our beloved grandfather Tadek for breakfast, lunch or dinner. He pampered us mercilessly :).

When I grew up a bit, my mother always prepared this speciality for me as I was ill – it was one of those things that I never refused to eat even during an illness!

Well, now that I’m an adult, I’ve started cooking it for myself or when I have my godchildren with me. I also like to spoil them just like my grandpa – but what aunts are for, right!

As you can see the recipe has survived for generations and you can now get to know one of the flavours of my childhood. I will share with you the recipes of my grandfather’s cookbook, and let me tell you – he was an excellent cook!

Ingredients (for 2 servings) for Semolina with fruit:

  • 250ml of milk
  • 250ml cream (30% or 36%)
  • pinch of salt
  • ½ a packet of vanilla sugar
  • 3 tbs of semolina
  • ½ tsp vanilla extract (optional)
  • Selected seasonal fruits or jam

Method:

  1. 150 ml of milk boil with cream, a pinch of salt and sugar in a pot with a thick bottom.
  2. In a bowl, disperse the remaining milk and semolina. Pour the mixture into boiling milk, bring to a boil, cook for 2 – 3 minutes, stirring constantly.
  3. You can add a vanilla extract while cooking, but this is an extra step.

Serve hot or chilled, with fruit or jam. Here we recommend our recipe for plum jam. Bon Appetit :-).
