Here to present a different approach to scrambled eggs. As tomatoes are in season it is a perfect opportunity to add them to your breakfast. But this time, not as a side dish but rather as a part of it.

It is quick to make so you can do it as a treat during your week. Or as a lovely weekend breakfast. Enjoy!

  • 2 eggs
  • 1 medium tomato about 150g
  • 1 spoon clarified butter
  • 2 slices of bread
  • A few basil leaves
  • 1 Pinch of salt


  • Melt the clarified butter in a pan over low heat.
  • Cut the tomato into thin strips and drop into the pans. Fry it for about a minute.
  • Add eggs, season with salt (you can add other spices, eg ground pepper according to preferences). Mix all the time.
  • When eggs are coagulated place it into a plate and sprinkle with shredded basil.
  • Serve with bread. We recommend frying it in the pan for additional taste :).
