The BEST Red Velvet Cupcake is a light cake with a beautiful red colour and a slight chocolate flavour with a little tang from the buttermilk. They are perfectly moist and topped with cream cheese frosting. You will agree that they are simply the best!
Also as the Valentines day is approaching and red being the colour of love you should make it for your loved ones. We can assure you they will appreciate the effort you put in making these delicacies. And to top it up you will impress them
So let’s get cracking!
Ingredients for red velvet cupcake:
- 3 eggs at room temperature for 30 minutes
- 450g of sugar
- 360g of flour
- 350ml buttermilk
- 170g of butter at room temperature for 30 minutes
- 2 tsp unsweetened cocoa powder
- 1 1/2 tsp vanilla extract
- 3/4 tsp salt
- 1 1/2 tsp baking soda
- 1 1/2 tsp red wine vinegar
- red food colouring (we suggest to go for powder)
- cream cheese frosting (double portion)
Method:
- Set the oven temperature to 180 degrees Celcius and allow the oven to heat while making the batter.
- Prepare the muffin tins and put in the muffin paper cups.
- Place the flour, cocoa powder and the salt together in a mixing bowl and mix.
- Place the butter in a separate mixing bowl and beat with an electric mixer on medium speed for 30 seconds.
- Add the sugar and the vanilla and continue to beat until all the ingredients are incorporated together.
- Next step would be to add the eggs one at a time beating after each egg addition until they are incorporated into the mixture.
- Then add the food colouring (add till you achieve the desired colour, but remember after baking they will darken very slightly) and beat on the low speed until combined.
- Alternating back forth between the flour and buttermilk add them to the butter mixture beating on low speed after each addition until both have been added.
- Place the baking soda in a small bowl and stir in the vinegar.
- Add the mixture to the batter and beat on low speed until just combined.
- Pour the batter into the prepared muffin paper cups filling each cup 2/3 full.
- Bake 15 minutes or until a toothpick inserted in the middle come out clean.
- Remove and cool to room temperature.
- Put the frosting on top and crumble one of the cupcakes on top (like in the picture)
