Buttermilk pancakes with apples are associated with my childhood. The aroma of pancakes in the morning spreading all around the apartment… MMMM. It could wake up even a sleepyhead like me :). I got up quickly, dressed and ran to mommy’s kitchen to taste some until all of them disappeared.

Inspired by childhood memories, we decided to recreate the recipe for buttermilk pancakes with apples. They are yummy, fluffy and only require simple ingredients that you probably already have in your kitchen. So let’s start.

  • 2 apples
  • 2 cups of natural buttermilk, about 400 ml
  • 1 egg
  • 2 tbsp of sugar
  • vanilla sugar
  • 1 tsp of baking soda
  • 1 tsp of salt
  • 2 – 3 cups of wheat flour, approx. 400 gr
  • Coconut oil (to fry pancakes, we will need coconut oil or rapeseed oil, we prefer to use coconut oil because it has neither smell nor taste).
  • Honey, sugar powder or maple syrup for decoration (optional).

  1. Wash the apples, peel it and remove the seeds. Cut into slices or grate it.
  2. Put into the bowl. It is important not to use the apple juice made of sliced apples, so let them rest a bit, to produce juice.
  3. Pour buttermilk into the bowl, stick the eggs and mix. We usually use a rod, we do not use a mixer.
  4. Add sugar, vanilla sugar, baking soda, salt and flour at the end. Mix everything so that there are no lumps left.
  5. Heat the pan, add coconut oil.
  6. It is recommended to use a large spoon to apply, cause pancakes are medium sized and usually, they grow up during frying. Fry to the golden skin, then turn it over.
  7. Before serving, decorate pancakes with honey, maple syrup or powdered sugar. Enjoy!
